I have learned to appreciate the simplicity in many things these days and this banana loaf is one of those simple pleasures. I make a batch weekly as it freezes oh so well.
I love lots of walnuts so go ahead and be creative with your ingredients.
2 cups almond flour or flour of choice
4 very ripe bananas
3 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1/8 tsp sea salt (optional)
1/2 teaspoon vanilla
3/4 cup chocolate chips
1 cup walnuts
Optional: 2 tablespoons milk (almond/cashew) or applesauce – If your bananas are very ripe, this may not be necessary
Preheat oven to 350 degrees. Use room temperature ingredients. Line a loaf pan or muffin tin with parchment paper.
Combine dry ingredients and mix together.
Beat the eggs, add the bananas and mash, then add all wet ingredients to the dry ingredients and mix together.
These cook fast so keep an eye on them. 20 to 25 minutes. They should be a delicious golden brown when ready.
I don’t add oil or sugar as I find the ripe bananas and nuts are enough to keep them moist and sweet.
